
Today my husband and I are celebrating his mother's life. She died a couple of years ago and to remember her we prepare some of the dishes she lovingly served to her family. Dinner this evening is Klub which is a Norwegian potato dumpling and it will be served with a beef pot roast and carrots. For dessert is Canthy's own pineapple pie (recipe below). So I encourage you to celebrate your life by living in the moment. Ellie |

Change Takes Time It's important to realize that repetition is the key to making the thought changes that allow for life changes. Changing ourselves takes both time and focus – one affirmation and one movement at a time. For example, if you are trying to lose weight, you can either consume fewer calories or burn more calories per day to accomplish your weight loss goal; it’s simple math, one pound equals 3500 calories. Just assume for a moment that you eat 500 more calories per day than you need. After a week you would be one pound heavier. To then lose that one pound you would need to increase your physical activity per day or reduce your food intake. Whichever choice you make, it involves a change in behavior each day, and this takes time and patience. It's really the same with this program. By stating the affirmations and performing the exercises each day, you retrain your mind, your body, and your being in a new and vibrant way. Please remember and accept the fact that you will be discouraged at times but with effort and focus change can and will prevail. This is an excerpt from the Meditative Movements book. |

Wilderness Inquiry (WI) is an organization dedicated to sharing the outdoors with others. Explore their website, and you will see that they provide all kinds of outdoor adventures for a wide variety of people. They offer canoe, kayak, hiking, horsepack, dogsled and raft trips throughout North America and the world. Each year they conduct over 250 events serving more than 9,000 people. The trips are designed for everyone from novices to seasoned outdoor veterans. Over the years, they have found that attitude is far more important than experience or ability. Canthy Peterson Pineapple Pie
|
Mix sugar, cornstarch, flour and salt. Add to pineapple and water. Add beaten egg yolks. Boil until thick and add butter; pour into baked 8 inch pie shell.
Use 3 egg whites for meringue. MERINGUE: Beat egg whites and a pinch of salt until stiff. Add 1/2 c. sugar and beat again. Put on filling and bake in 375 oven until golden brown. Favorite Recipes Dell A.L.C. Women Cookbook Frost, MN 1973 |
